BREW GUIDE: CHEMEX


THE CHEMEX

The Chemex is a ubiquitous and quintessential brewer, found in any specialty shop and a majority of kitchens alike. For that reason, we’ve decided to begin our Brewing Guides with this iconic method. We hope to provide you with not only incredible tasting beans, but the knowledge and know-how to make the best coffee, right at home. Beautiful design, ease of use, and balanced flavor: let’s get started with our Chemex Brew Guide.


Estimated time: 5 minutes

What you need:

  • Chemex brewer

  • Chemex filter

  • 30 g of coffee

  • boiling water

  • Scale

  • Timer or kitchen clock

  • Spoon

  • Mug

  1. PREP

Begin by gathering all of your necessary materials from the list above, and take your kettle of boiling water off of the stove. Fold your Chemex filter, and place it into your brewer. Saturate your filter with water to rinse it of any chemical or papery taste. Empty this pour down the drain.

2.   MEASURE

Add 30 grams, or 3 tablespoons, of coffee to your Chemex filter. Place your Chemex brewer onto your kitchen scale and tare it to zero. Be sure to have your timer handy!

3.   FIRST POUR

Begin with your first pour and start your kitchen timer. Pour water into your Chemex brewer, and be sure to douse all of your grounds with water. Continue to add water until your scale reads at 150g. Finish the first pour by giving your grounds a little stir.

4.   SECOND POUR

After waiting a minute or so, begin your second pour. Pour the water in a circular motion, ensuring you fully soak the grounds again. Continue to add water until the scale reads 450g.

5.   FINAL POUR

After another minute, begin your final pour. Fill up your brewer by adding even more water, completely soaking your ground coffee, until your scale reads 500g of water.

6.   WAIT

Now, the hardest part: waiting for your coffee to brew. Allow the water to slowly drip down from the grounds into the Chemex brewer. This should only take a few minutes. Once its finished brewing, through your filter with the grounds into the trash.

7.   ENJOY

The best part! All that is left now to do is drink your freshly brewed coffee. Share with a friend (or don’t) and enjoy!
